Tried to keep it in game order, somewhat broken up as the Remake trilogy currently is.
Scorpion Sentinel I know was used in Ala Mhigo but it's so iconic as far as FF7 bosses go and I feel like they'd be able to rework it.
The more human bosses like Reno/Rude, Elena/Tseng and Scarlet are not the most likely, but they'd be fun fights in the vein of Deep Blue/Red Hot from Arcadion.
Vincent and his Galian Beast form would be perfect for a Savage exclusive phase and ending on Sephiroth/Safer Sephiroth is borderline guaranteed.
Had fun predicting the mounts too. For first tier I considered the Airbuster too, especially if it plays the Airbuster theme from Remake. Cait Sith's Moogle would be a fun middle mount and the One Wing playing OWA would be a perfect final drop.
Just some fun ideas!
