When the e12 look was revealed, I think that pretty much everyone had a "what the..." moment. After I read the name Artemis in the final cutscene I made a quick connection as long time ago I was into ancient Greek and Latin studies.
I think that where Square-Enix took inspiration from for the Eden's Promise door boss might have been discussed, but I can see that there are still people wondering why there's a "monster with lots of boobs" as the last boss. I made a very quick video about it if anybody is interested and I'll leave the link at the end of this post. If you don't want to watch the video, Square-Enix took inspiration from the Greek goddess Artemis who was - amongst other things - the goddess of fertility. This explains the many breasts, although as I mention in the video, depending on where those Greek worshipers where coming from, they were either believing that those were female breasts or bulls' testicles (sorry if you won't look at the boss with the same eyes ever again ).
A possible easter egg is that the name Artemis is actually connected to Ultimecia, as the JP pronunciation of Ultimecia is something that sounds like Arutemisia. As a matter of fact, in some parts of Southern and Central Europe the boss has been translated with the name "Artemisia", which in Greek means "of Artemis". For those who like lore and such and were not aware of this information, I hope this was interesting to you. The FF games have many references to mythology from everywhere and this is something I've always found very fascinating. As I am a huge fan of pretty much every FF (some less than others!), I was so intrigued to find easter eggs and such in this Eden's raid as FF8 was the first one I ever completed... long long time ago. ^^
