I know everyone does it different but here's a quick screen recording of my setup on PS4 for my SMN:

I don't normally have the ability names turned on, that was just for the video. I also haven't unlocked everything yet on this character but I have it all set up with the future abilities now so I don't have to relearn it later. I have the XHB set to 80% size and the WXHB set to 60%. I also moved them down a bit.
As some of you may know, many of the abilities automatically change themselves when they rank up or when you're in your trances or have your summons out, etc.
So I actually have both my expanded controls (L2 then R2, or R2 then L2) and the WXHB set to the SAME bar, bar two. So I have two different ways to get to the bar, along with a visual reminder of what's there. For this reason I also removed bar 2 from the bar cycling when I hit R1.
I have my 3 summons and dismiss set to the bar two left-side D pad because I don't use those very often, but they're good to have if I'm going between bosses and trash. For that reason they aren't shown in the WXHB but I can still get to them with L2+R2. Then my heals and resurrect are on there as well with the X, O, Triangle, Square.
On the right trigger thumb buttons for that bar I have all my AoE abilities, along with my DoTs for the times I have to manually cast them instead of using Tri-disaster. I keep Bane and Ruin II on both bars for obvious reasons.
Bar 8 is default, except I never use the crafting or gathering log from there so I added my mount and buff food to that bar since they're both used out-of-combat.
Anyway, I hope this gives a helpful starting point to some of you who may be feeling a little overwhelmed with all the abilities and a controller!
