I know that at ~70 they're all like "omg you achieved the pinnacle of what anyone can teach you, you're on your own now", for a LOT of the jobs. Then at lvl 80, 90, and 100 we get role quests which just puts healers, tanks, phys ranged, casters, and melee all in the same groups. I get that. They can't do 5 job quests for every job. (although they seem to be able to add a useless amount of yellow quests each expansion tho).
But I still think some sort of job quest for the expansion-max-level extra skill would be cool. Doesn't have to be taught from someone in particular. They can just create a quest of "hey, you have a feeling you can learn something from this location and you experiment with your skills and TADAH you found a new awesome skill to work with because of X and Y reasons as you reminisce about past fights and new techniques you learned along the way" *cue awesome cutscene of holding up job stone and learning a new capstone skill*
Like for example, Summoner. In general, their summons are based on primals that we've fought or known about and we can then summon them as a lesser form, either demi or egi.
And then now, at lvl 100, we get a SOLAR BAHAMUT. Like... ???????... where the *heck* did this guy come from, how did we learn to summon it, what does this summon *mean* or represent? There's just no explanation, you just get a new shape of Bahamut, who is classed as WORLD ENDING CATACLYSMIC EVENT BY THE WAY, and it's just... kinda there. Congrats... i guess? I really miss out on the job RP here. I feel like they did more effort in the useless blue quests for aether currents than job roleplay explanations. Kind of a miss in my book >.<
