There's been many complaints about people at level 80 wearing sub-80 gear, or with empty slots. I've also seen question threads about how to get gear now that you're at level 80. The fastest way to get gear at level 80 is to buy the crafted Exarchic (currently) set, but if you're cheap (or broke) you can gear up without spending a single gil just by playing the game. I would strongly suggest buying the Exarchic Weapon for your class though. Weapons can be hard to come by as they are not dropped by any of the post-SB MSQ dungeons.
So you're a fresh level 80 and you've just finished the quest "Shadowbringers", the first thing to do (if you haven't already done it) is to go talk to Grenoldt at (x34.2, y25.7) in The Tempest and get your free item level 430 armour set and weapon.
Weapon (and Shield for PLD) - Grenoldt class weapon - The Tempest (x34.2, y25.7) Armor - Grenoldt class armour - The Tempest (x34.2, y25.7)
Then there are some quests you can do (all of which are unlocked via the MSQ quests that you've already done) which will give you a set of HQ crafted item level 415 jewelery. If you've already got better, ignore these, if not they're easy upgrades.
Belt - Dwarven Mythril Plate Belt of <class> - You Know the Words - Kholusia (x12.4, y8.1) Earring - Petalite Earrings of <class> - Knocking the Knockers - Kholusia (x12.9, y9.4) Necklace - Petalite Choker of <class> - Scavenger Deep - The Tempest (x34.2, y18.1) Bracelet - Petalite Bracelet of <class> - The Unbroken Thread - The Chrystarium (x12.8, y8.2) Ring - Petalite Ring of <class> - Treasure Hunting Tykes - Lakeland (x16.7, y36.5)
There's your base-line level 80 kit. Continue doing your main scenario quests but make a point of unlocking The Twinning ("By the Time You Hear This" - The Chrystarioum - (x8.5, y10.9)) and Akadaemia Anyder ("Akadaemia Anyder" - Eulmore - (x12.9, y12.4)). They will also drop the 430 jewellery but more importantly, they are required for the Level 80 Roulette.
Also make sure you are doing Leveling Roulette, MSQ Roulette, 50-60-70 Roulette and Alliance Roulette whenever you can (or feel like it, I know some people hate them) as these will give you Tomestones of Allegory and Revelation if you do them with a class at level 80. Yes, you're losing (a lot of) XP for any other classes you might have, but those tomestones are good for a piece of gear per day(ish). Allegory buys you item level 490 Chrystarium gear and the Revelation tomes buy you the current item level 520Cryptlurker's set.
Continue doing roulettes, and work on the Main Scenario. Once you have unlocked The Grand Cosmos and Anamnessis Anyder, you will gain access to the Level 80 Roulette for another injection of tomestones daily. The Grand Cosmos drops item level 445 gear and Anamnesis Anyder will drop item level 455 gear. Upgrade as needed, but the Tomestone gear is the goal.
For upgrading your gear with Tomestones, the upgrade priority goes as such:
I'd suggest getting the entire set of Chrystarium gear (ilevel 490) as soon as you can, then upgrading the Cryptlurker's stuff over it.
You're now caught up, congratulations.
EDIT: Adding a section on Resistance Weapons.
Resistance Weapons are the Shadowbringers Relic Weapons. They are very pretty, but until the final patch (or 2?) of any expansion they will lag behind the top weapons. The current relics have the following requirements:

EDIT2: Eden's Gate/Verse/Promise is a set of 12 (3 groups of 4) 8-man trials that have both a normal and Savage version. Eden's Gate is the first set of 4 trials and gives you access to item level 450 gear it requires level 425 gear to enter. Eden's Verse requires 455 to get in and rewards 480 gear. The Eden's Promise trials require 485 to get in and reward item level 510 armor. Eden's Promise is the current trial series and will require a minimum of 5 weeks drops to get a set of 510 for one class. Once per week you can get a weapon token drop from the last trial. 7 of these tokens, combined with 1,000 Revelation tomestones will get you a 520 weapon.
These Trial series' also have Savage version which grant armour and weapons of a higher ilvl. Eden's Promise (current) will get you a set of 530, the weapon is 535.

Weapon - This is why I strongly suggest that you buy the best crafted weapon (Exarchic) as it will be both the largest increase and ... upgrading it with tomes is annoying as you require Eden raid drops.
Chest and Legs - These share the next most importance and should be upgraded first whenever you can. They provide the most stats and defense and m.defense (armour).
Helmet, gloves and boots - These are next priority as the next highest stats and also def/mdef.
Belt. Same stats as the rest of the Jewellery but also provide defense.
The rest of the jewellery. There are (very) minor benefits to picking some peices first depending on secondary stats, but this varies per class and is only a minor difference.
I'd suggest getting the entire set of Chrystarium gear (ilevel 490) as soon as you can, then upgrading the Cryptlurker's stuff over it.
