An open discussion about DoL/DoH

So, lately I am leveling up my crafters and gatherers, and also looking a bit more into the MB economy to see if I can make some Gil on the side. While doing this, I came to a realization about something that, imo, is actually really wrong with the craftinggathering system, and wanted to see if someone else reached the same conclusion and to open a bit of a discussion about this.

So, for me, the main problem that fucks up the whole Market Board economy is that everyone can be everything. What I mean is that every character can actually get every DoH/DoL class up to max level and that, from an economics point of view, is a curse. Think about it, in real life, one can not be the whole production chain, from base materials to finished product, and that gives life to the market, to the economic exchange. Here, on the other hand, that economy doesnt work, because everyone can do everything and the market gets flooded. There is no (or almost none) scarcity, no law of supply and demand, no market elasticity. In the end, that causes, imo, a Gil stagnation where the people who have all the classes and invest lot of time in that hoard a ton of Gil, while other people struggle with getting their hand on what they want. Also, that causes so much competitivity that the general prices of basically everything gets sinked to the floor and stuff has no value anymore.

Dont get me wrong, I`m not saying the system should be changed, it wouldnt be possible, I was just wondering how it would have been if, for example, everyone were to be allowed only one DoL class and like 2 DoH classes from the beginning.
